On Cruising and Cooking: Anj Random with Chef Richard

One of the things that I am appreciative about these days is the glory to be with my family - my mom and with my younger brother. I promised this year that I would spend most of my time to be with them. So, with the second episode of my channel, "Anj Random for People Advocate", I finally convinced my younger brother to do an episode with me (in exchange of 2 piece burger steaks). 

Never Too Late to Follow One's Passion
My brother spent his teenage years in Maryland with my mom and dad while studying in college. One day, when he went back in the Philippines, he told me about going to a Culinary School. I didn't give any second thoughts but just nodded and said, "if you love doing it then, go ahead. I will support you all the way."

Days after, he started his culinary journey while studying all the way and giving me some insights about what they had been doing in school. Long after, he graduated in the Culinary School as he was preparing for his job in a cruise ship.  

"Are you sure this is parsley?" I asked him randomly when he was preparing for lunch.
"I know the smell so well. Part of my exam is to identify at least 500 spices, and this has been our practice at work." I was impressed. 

Still, I am talking with my brother as if he was that young boy. I was at awe how he grew up and managed to be this successful. I am so proud of him how he managed to follow his dreams and his passion. 

Our Cooking Challenge
My brother is a meat-eater while I am an ovo-pesco-vegetarian. Imagine the feast when I go home. He cooks for my mom and him while he cooks for another one for me. The only thing that we can agree with is how he cook his sunny side-up egg. Perfect!

During our show, he agreed that he would do the Vegan-Style Arroz ala Cubana. I was so happy that finally we get to do a show together. So, I am sharing this recipe for every one to try:

Ingredients:
- Rehydrated Tofu
- Red Kidney Beans (You can also try Black Beans)
- Green Peas
- Mushroom
- Pickle Relish
- Pepper
- Spanish Paprika
- Garlic Gloves
- Onions 
- Parsley/Celery
- Cardaba/Saba
- White Sugar

Procedure:
1. Heat the pan with coconut oil then saute onions and garlic in a medium heat. 
2. Add the rest of the ingredients except bananas and pickle relish.
3. Sprinkle sugar on the bananas then heat it in the oven for 15 minutes. 
4. Serve hot with brown rice, bananas, and pickle relish.

    1. Thank you, Maam Josil. In fact, we served it to our Mom's guests and then they asked for a quotation. They wanted it to be part of their menu. So happy! =)

  4. It's always interesting to see people try cooking vegan food. I've eaten vegetarian/vegan food and I gotta say that it's really encouraging. People should give it a chance. :)

  5. Kalami! It makes me happy to see and read stories about siblings making moments and creating quality time together. I'm happy that you were able to convince your brother to do an episode with you, Anj. :) Quality time with sibs is one of the things I miss doing with my little brother and sister.
